B is berry berry, extraordinary…

A simple and fast dessert that I made this evening, took me less than 10 minutes (preparation, cleaning up)… Probably takes less time eating it…

Strawberries & Cream
Ingredients


200g strawberries or other assorted berries i.e. blueberries, raspberries, gooseberries, blackberries (you get the idea)
50g kiwi or other firm fruit i.e. persimmons
150ml whipping cream (minimum 34% fat)
75g caster sugar (I’m using vanilla sugar i.e. caster sugar stored with used vanilla pods)

Technique:


1. Do NOT rinse berries as you will bruise them. Wipe gently with a kitchen towel and keep covered in the chiller. Cut the strawberries in halves if they are ginourmous in size.
2. Freeze the bowl and hand whisk you will be using to whip the cream, in the freezer for 5 minutes.


3. Whisk the cream and sugar until soft peaks (as illustrated).
4. Serve immediately or store cream, covered in chiller for up to 24 hours.
